200ml recently pressed lemon juice
500g granulated sugar
To make the Drink (yields 850ml, enough for 10)

200ml clementine syrup (as made above)
Whole cranberries, to garnish

Directions
For the Cordial: Put all the components in a pot, bring to a light boil, mixing so the sugar melts. After that, take off the burner and leave to cool down completely. Decant into a sterilised bottle, seal and store in the refrigerator, where it will keep for around four weeks.
To make Cocktail Base: Pour all the liquid ingredients into a large bottle, allow it to infuse for one hour, then pass it through , ideally through cheesecloth, making it completely strained.
To serve: Add 85ml of your premix to a cocktail shaker filled with ice, and agitate gently for one minute to cool it down. Filter to a chilled martini glass or equivalent, garnish with a few cranberries and finish by giving it a quick spritz with the mandarin essence over the drink.
